A deliciously nourishing gummy made with natural ingredients including Irish moss, ViBERi New Zealand Blackcurrant Powder, Manuka honey, and lime. These antioxidant-rich gummies are the perfect wholesome treat- gluten free, refined sugar free, and bursting with New Zealand goodness.
Ingredients
Irish Moss Gel
2 cups filtered water
2 Tbsp Pacific Harvest Irish Moss pieces
Gummy Mixture
1 tsp Pacific Harvest Agar Powder
2 Tbsp ViBERi New Zealand Blackcurrant Powder
1 Tbsp Manuka honey (or to taste)
Juice of 1 lime
Method
Prepare the Irish Moss Gel:
Soak the Irish moss in filtered water overnight to soften. Drain and rinse well.
Add to a saucepan with 2 cups of fresh filtered water and simmer gently for 10–15 minutes, until the mixture thickens. Blend until smooth to form a gel.
Make the Gummies:
Return the Irish moss gel to a clean saucepan. Add agar powder and whisk until fully dissolved over gentle heat. Stir in ViBERi Blackcurrant Powder, Manuka honey, and lime juice until smooth and well combined.
Set the Gummies:
Pour into a lined tray or silicone moulds. Allow to cool at room temperature, then refrigerate for 2–3 hours or until firm.
To Serve
Cut into bite-sized pieces and enjoy as a daily antioxidant boost or post-workout snack.
Storage: Store in an airtight container in the fridge for up to one week, or freeze for up to one month.
