This wholesome banana bread is moist, lightly spiced, and studded with bursts of juicy blackcurrant. Naturally sweetened and easy to make- perfect for morning tea or an everyday treat.
Ingredients
⅓ cup (75 grams) melted coconut oil or extra-virgin olive oil or high quality vegetable oil*
½ cup honey (168 grams) or maple syrup (155 grams)
2 eggs
1 cup (225 grams) mashed ripe bananas (about 2 ½ medium or 2 large bananas)
¼ cup (56 grams) milk of choice or water
1 teaspoon baking soda
1 handful Frozen Blackcurrants
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon ground cinnamon, plus more to swirl on top
Method

Preheat the oven to 175°C and line a loaf tin with baking paper.

In a large bowl, whisk together the melted oil and honey (or maple syrup). Add the eggs and beat until smooth.

Stir in the mashed banana, milk, vanilla, baking soda, salt, and cinnamon until well combined.

Gently fold in the flour until just incorporated, then carefully stir through the blackcurrants.

Pour the batter into the prepared tin. Sprinkle a little extra cinnamon, oats and blackcurrants on top.

Bake for 50–60 minutes, or until a skewer inserted into the centre comes out clean.

Cool in the tin for 10 minutes, then transfer to a rack to cool completely before slicing.
